Chocolate -Pecan Chip Cookies

Ingredients

• 3/4 cup sugar
• 3/4 cup packed brown sugar
• 1 cup butter
• 1 large egg
• 2 1/4 cups all-purpose flour
• 1 teaspoon baking soda
• 1/2 teaspoon salt
• 2 cups semisweet chocolate chips
• 1 cup chopped pecans



Directions

Preheat oven to 375 degrees. Mix sugar, brown sugar, butter(make sure the butter is at room temperature) and egg in a large bowl by hand. Stir in flour, baking soda, and salt. The dough will be very stiff. Stir in chocolate chips & chopped pecans. Drop dough by rounded tablespoonfuls 2 inches apart onto ungreased cookie sheet. Bake 8 to 10 minutes or until light brown. The centers will be soft. Let cool for one minute then remove from cookie sheet and place on wire rack to finish cooling. Enjoy the nice thick chewy cookies!!! This makes about 3 dozen cookies.

Gobhi Manchurian

Ingredients:

Cauliflower – ½

Onions – 2 medium ones, chopped it into medium cubes

Green Chilies – as per taste for spice, chop it

Garlic – 3-4 cloves, mince it

Ginger – 1-2 inches, mince it

Coriander Leaves – handful and chop it

Corn Flour – 4 tbsp, gives crispiness, if u want more then add more

All purpose flour/Maida – about 1 cup

Salt to taste


Sauces:


Ketchup – 2 tbsp, gives a nice color, don’t add too much, then it will be sweet

Hot Sauce – 1 tbsp

Soy Sauce – 3 tbsp, also give nice color and taste, don’t add too much, gets salty

White Vinegar – 1 ½ tbsp, give a little tangy taste.

Corn Flour – 2 tbsp, make it into a thick paste with water.

Procedure:

First cut the gobhi into medium flowerets and soak them in hot water with little salt for about 5-6mins. Drain and dry it out in a paper towel.

Make a paste with all purpose flour and corn Flour, consistency of what we make for bondas. Dip each gobhi into this paste and deep fry it in hot oil and remove and drain the excess oil on a paper towel. Don’t make the paste too thick.

Heat oil in a kadai and add some oil, once its hot, had minced garlic and ginger and fry for 2 min and then add the chopped green chilies, fry for another 1 min and add the chopped onions and fry till its translucent. Once the onions are done add the deep fried gobhi and add all the sauces and very little salt, as the soy sauce has salt in it, if necessary add it later. Finally chop the coriander leaves and sprinkle over and mix well.

Spring Onion Curry

Ingredients:

2 bunch of spring onion.
2 medium size tomato
1tsp of sambhar powder (or any curry powder) (I used MTR powder)
1tsp of jaggery or brown sugar
1/2 tsp of tamrind paste or about 2tsp juice of tamarind soaked in water
1 1/2 tsp cornflour, make it into a paste by adding water.
salt as per taste
To garnish fresh coconut and few spring onion( this is optional)
1tsp of oil and mustard seeds for seasoning.

Method :

1. Heat a tsp of oil, when hot add mustard seeds. When it starts to pop add veggies.
2. Saute it for few minutes( both tomato and sp onion take less time to cook). Than add all the spices and cornflour paste. Add water and let it cook for 10 min or so.
3. Taste it to make sure all the spice and salt are well adjusted. Finaly garnish with coconut and few sp onions.

Serve it with hot rotis.
